It should be soft enough but not melting. -you can also try starting with a low speed. -another suggestion is try to cream the butter first and then gradually add the sugar. However, my problem with this mixer is that when I make cookies, the butter and sugar don't whip together and get fluffy. Instead, the butter ends up at the outside of the bowl and and then the mixer is doing nothing to get it off. It does not reach the outer edges of the bowl. So I constantly have to stop the mixer, lift it up, scrape the sides and start again. It never whips the ingredients together. Do you have a suggestion for this problem? I would love to hear it!!
